LOLZ - my only prior experience with Welles was his voice-over in the Transformers Movie. The Critic cartoon (the one with Jon Lovitz) had multiple parodies of Welles - and they were dead on.

Yes, you're right. I'm a whisky man so that's what I know. I was told that wine and champagne do in fact continue to age in the bottle by a special process that allows air to get inside. I assume that is true for beer. This is not true for hard spirits. Which is because, as you say, are distilled and not fermented thus have no active yeast. When I was talking about fermenting I was refering to ageing. Just a case of saying crap with out knowing what the hell I'm talking about. We've all done it.

No, that's not true. Alcoholic beverages can continue to ferment within the bottle. So long as the yeast is provided with food, fermentation will continue. I've never made champagne, but if you brew beer you'd know that it undergoes it's final fermentation within the bottle. You then start talking about ageing here, which is something completely different to fermentation.
